Cinnamon Chia Seed Coffee Cake

I mentioned in this post last week that I'm trying to incorporate ever-awesome and oh-so-healthy chia seeds into my diet on a daily basis. So far I've added them to yogurt and pudding, and I've sprinkled them on the tortilla before adding cheese when making quesadillas. And yesterday I created a coffee cake that features the seeds—and is fabulously yummy.

Cinnamon Chia Seed Coffee Cake

Jim and I ate it for breakfast yesterday (with fresh pineapple), and we both loved it. Sure, it's cake, and I wouldn't go so far as to say it's healthy. I would, though, say it makes for a healthier breakfast than pancakes or waffles. Well, unless chia seeds are added to the batter for either.

Hmmm... chia seed pancakes? I just may have to try that!
